A Chartreuse of Apples and Rice

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Boil the rice with the cinnamon in milk until thick, stirring in the rose-water or orange-flower water.

  2. Pare the apples, scoop out the cores, and fill the holes with raspberry jam.

Assemble and bake

  1. Border a deep dish with pastry, place the apples inside, leaving space between them, and fill the gaps with rice.

  2. Brush the entire dish with the egg yolk and sprinkle sugar thickly over it.

  3. Create a pattern on top with sweetmeats and bake for 1 hour at 400°F (200°C).

What each ingredient does

Rice
Thickens the milk and fills the gaps between apples, giving a soft, creamy body around the fruit.
Milk
Cooks with the rice to form a thick, creamy base that binds the filling.
Apples
Provide the main fruit body, softening as they bake while holding their shape in the dish.
Egg yolk
Brushed over the surface, it promotes browning and a glossy finish on the pastry and top.
Raspberry jam
Adds sweetness and fruity flavour inside the apple cores as it warms and melts.

The step that matters

Boiling the rice in milk until thick. Rice starch thickens as it cooks in milk, and the mixture must be stirred steadily so it does not scorch on the base. Properly thickened rice holds its shape in the gaps instead of running out during baking.

Swap the raspberry

How well each one fits the dish's main ingredients (rice, cinnamon, milk, rose, apple, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Raspberrythe original

Fit is the average pairing score against rice, cinnamon, milk, rose, apple, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
