Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small button mushrooms
Form the body of the sauce and release savoury flavour as they cook.
White sauce
Provides the creamy base that carries the mushrooms and thickens the dish.
Butter
Adds richness and a silky mouthfeel to the white sauce.

The step that matters

Simmering the mushrooms until tender. Mushrooms hold a lot of water and can stay rubbery if undercooked, while overcooking makes them soft and grey. Simmering gently in the sauce cooks them through and lets them absorb flavour without the sauce splitting or sticking.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, sauce, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
