Brandy or Burnt Sugar Color

Ingredients

Directions

  1. Put sugar into a copper pan.

  2. Dissolve with water and cook on moderate heat until it burns black as tar.

  3. Add hot water a little at a time until it reaches the consistency of thin syrup.

  4. Do not let the sugar burn to a cinder, as it will not mix with the water.

Recipe from a historical cookbook (Internet Archive).
