Ingredients

Directions

Prepare the strawberries

  1. Clean and mash the strawberries in an earthen vessel.

  2. Press the mixture through cheesecloth to remove seeds.

  3. Add powdered sugar to sweeten the strawberry juice.

  4. Chill the juice in the ice box until very cold.

Freeze and pack

  1. Mix the chilled strawberry juice into the frozen, unflavored ice cream.

  2. Add more salt to the ice cream mixture to help it congeal rapidly.

  3. Cut down the mixture from the sides every few minutes until solid.

  4. Pack the ice cream away as you would with other creams.

What each ingredient does

Ripe strawberries
Provide the main flavor and the fruit juice that gives the ice cream its color and taste.
Powdered sugar
Sweetens the strawberry juice and softens the ice cream's freezing texture.
Frozen unflavored ice cream
Serves as the creamy base that the chilled strawberry juice is mixed into.

The step that matters

Chilling the juice until very cold before mixing. Adding warm juice to the frozen base melts it and slows freezing, so the mixture may not set solid. Cold juice keeps the base firm enough to congeal quickly.
