What each ingredient does

Blackberry juice
Provides the main fruit flavor, color, and liquid base of the cordial.
Sugar
Adds sweetness and helps preserve the cordial.
Brandy
Adds alcohol that helps preserve the cordial and adds warmth.
Ground cinnamon
Adds warm, aromatic spice flavor.
Ground nutmeg
Adds warm, aromatic spice flavor.

The step that matters

Skim and cover until cold. Skimming removes foam and impurities that rise during boiling, which can spoil or cloud the cordial. Covering it closely while it cools keeps out dust and airborne microbes before bottling.
