Why it works: Nutmeg and pepper match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 300°F (150°C).

  2. In a large bowl, mix the veal, salt pork, rolled crackers, eggs, butter, salt, nutmeg, black pepper, and cayenne pepper thoroughly.

  3. Pack the mixture into a baking pan.

Bake and serve

  1. Bake slowly, basting often with the fat that collects at the sides of the pan or with melted butter in hot water.

  2. Once cool, slice very thin and garnish with celery or parsley leaves.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf, giving it its meaty structure and substance.
Salt pork
Adds fat that keeps the loaf moist and carries flavour through the bake.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Rolled crackers
Absorb juices and fat, helping the loaf stay tender and hold together.

The step that matters

Bake slowly and baste often. A low oven heats the loaf gently so the proteins set without tightening and drying out. Basting with fat replaces moisture lost during baking and keeps the surface from drying.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pork, egg, butter, meat, pepper):

  1. Parsleyfits about as well
  2. Sagefits about as well
  3. Thymefits about as well
  4. Nutmegthe original

Fit is the average pairing score against veal, pork, egg, butter, meat, pepper. Candidates are from the same food group and used in at least 100 recipes.
