Timbale of Salmon

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the salmon

  1. Remove bones, skin, and oil from the salmon and mash through a sieve.

  2. Gradually add the cream while beating continuously until smooth and white.

  3. Incorporate the egg whites, salt, and cayenne to taste.

Bake and serve

  1. Fill small cups with the mixture and place them in a baking pan half-filled with hot water.

  2. Bake at 400°F (200°C) for 20 minutes.

  3. Once done, turn out of the cups and pour drawn butter over the timbales.

What each ingredient does

Salmon
Provides the main body and flavor of the timbales.
Cream
Adds moisture and richness, keeping the mixture smooth and tender.
Egg whites
Set during baking to give the timbales structure and a light, firm texture.

The step that matters

Gradually add the cream while beating. Adding cream slowly while beating lets it emulsify evenly into the mashed salmon, producing a smooth, uniform mixture. Adding it all at once can leave lumps or a loose, separated texture.
