Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped to soft peaks, it forms the light, rich body of the dessert.
Egg whites
Beaten to stiff peaks, they add airy lift and a light, delicate texture.
Gelatine
Once dissolved and chilled, it sets the mixture so it holds its shape when unmolded.
Powdered sugar
Dissolves easily into the gelatine mixture, adding sweetness throughout the dessert.

The step that matters

Folding the egg whites and gelatine into the cream. Gentle folding keeps the air trapped in the whipped cream and egg whites. Stirring vigorously would deflate the foam and leave the set dessert dense instead of light.
