Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wipe the meat and tie it into shape or fasten with a skewer.

  2. Place the meat in a pan without seasoning or water and put it in a 400°F (200°C) oven.

  3. Once seared, dredge the meat with salt, pepper, and flour, or leave it unseasoned until half done.

  4. For gravy, cook together 2 tablespoons of flour, 1 tablespoon of butter, and 1 pint of water.

  5. Pour the hot gravy over the roast and return it to the oven until fully cooked.

  6. Allow 12 minutes per pound for rare meat and 20 minutes for well done. Do not let it burn.
