Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the bulk of the dressing and absorbs the butter and cream to give body.
Butter
Adds fat and richness, coating the bread and carrying flavour.
Sweet cream
Adds moisture so the bread softens into a cohesive, soft dough.
Eggs
Bind the mixture as they set, holding the dressing together.

The step that matters

Adding the cream. Bread absorbs liquid at different rates, so the mixture can turn either too dry or too wet. Adding cream gradually and checking for a soft dough keeps the texture right before the dressing is bound with egg.

Swap the sage

How well each one fits the dish's main ingredients (bread, butter, pepper, cream, egg):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits about as well
  4. Sagethe original

Fit is the average pairing score against bread, butter, pepper, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
