Veal 'scallop

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mince the cold veal very fine.

  2. Layer veal in a buttered baking dish, seasoning with pepper, salt, and nutmeg.

  3. Add a layer of fine bread crumbs, then more veal, repeating until the dish is full.

  4. Wet the layers with good broth.

  5. Top with a layer of crumbs soaked in milk and mixed with the beaten egg.

  6. Cover with a pan and bake in a hot oven at 400°F (200°C) for 30 minutes, then uncover and brown for 10 minutes.
