Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cauliflower

  1. Cook the cauliflower in salted water for 1 hour.

  2. Drain and break apart the cauliflower.

Assemble and bake

  1. Layer cauliflower in a baking dish, moisten with cream sauce, and sprinkle with grated cheese.

  2. Repeat layers until all cauliflower is used.

  3. Cover with bread crumbs and cheese, and dot with butter.

  4. Bake for 30 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the bulk of the dish and becomes tender during the long cooking in water.
Cream sauce
Adds moisture and richness so the layers stay creamy rather than dry while baking.
Grated cheese
Melts into the sauce and browns on top, adding savoury flavour and a golden crust.
Bread crumbs
Forms a crisp, browned topping that contrasts with the soft layers beneath.
Butter
Adds fat that helps the topping brown and gives a rich flavour.

The step that matters

Drain the cauliflower well before layering. Excess cooking water left on the cauliflower thins the cream sauce and makes the dish watery, so the layers will not set properly in the oven.
