Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the dressing as they cook gently in the warm vinegar and butter mixture.
Butter
Adds richness and a smooth, rounded body to the dressing.
Vinegar
Provides the acidity that gives the dressing its sharp, tangy flavour.
Cream
Adds moisture and richness, lightening the salad's texture.
Chicken
Forms the main body of the salad, providing most of its substance.
Celery
Adds crisp texture that contrasts with the soft chicken and dressing.

The step that matters

Heating the dressing and adding the egg yolks. Heat the vinegar and butter without letting them boil, and add the beaten yolks slowly while stirring. Boiling or rushing the yolks can scramble them, leaving the dressing lumpy instead of smooth and thick.

Swap the celery

How well each one fits the dish's main ingredients (vinegar, butter, egg, mustard, chicken, cream):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits about as well
  4. Celerythe original

Fit is the average pairing score against vinegar, butter, egg, mustard, chicken, cream. Candidates are from the same food group and used in at least 100 recipes.
