Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the croquettes and gives them their savoury flavour.
Flour
Thickens the cream with butter so the filling holds its shape.
Egg yolks
Bind the filling and help it set when cooked, adding richness.
Breadcrumbs
Form a crisp, golden coating that browns when fried.
Butter
Adds fat and richness, and helps make the flour-thickened sauce smooth.

The step that matters

Let cool. The filling must be cool and firm enough to shape; if it is still warm and loose, the croquettes will slump and may split or burst in the hot fat.

Swap the onion

How well each one fits the dish's main ingredients (chicken, pepper, cream, flour, egg, lemon, butter):

  1. Spinachfits better
  2. Asparagusfits better
  3. Leekfits better
