Whole Wheat Bread

Why it works: Milk and wheat are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,418 recipes. Both carry (e,z)-2,6-nonadienal, which smells cucumber, melon. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Scald the milk and mix it with the water, sugar, salt, and butter.

  2. Let the mixture cool, then add the dissolved yeast.

  3. Stir in enough whole wheat flour to make a thin batter and let it stand in a warm place until light.

  4. Add all-purpose flour to make a soft dough and knead again.

Shape and bake

  1. Shape into loaves and let rise in a warm place for 30 minutes.

  2. Bake in a moderate oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole wheat flour
Forms a thin batter first, adding fiber-rich body and a nuttier, denser crumb than white flour.
All-purpose flour
Adds more gluten-forming protein, letting the soft dough hold its shape and rise.
Compressed yeast
Ferments sugars to produce gas, which makes the dough rise and become light.
Fresh milk
Adds richness, softness, and browning from its milk sugars and proteins.
Butter
Adds fat that tenderizes the crumb and gives a softer texture.

The step that matters

Let the batter stand until light. The yeast needs warmth and time to ferment and produce gas. If the batter is underproofed, the loaves will be dense; if the rise is too long, the structure can collapse.
