Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooked in milk until soft, it forms the body of the pudding.
Milk
Cooks with the rice to create the creamy base.
Gelatin
Sets the pudding so it holds its shape when chilled.
Whipped cream
Adds lightness and richness to the chilled pudding.
Sugar
Sweetens the pudding.

The step that matters

Adding the gelatin when the rice is partly cool. If the mixture is too hot, the gelatin may not set properly, and if it is cold it may set in lumps before it is evenly distributed. Stirring until fully dissolved ensures an even set.

Swap the almond

How well each one fits the dish's main ingredients (rice, milk, gelatin, sugar, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Beansfits less well

Fit is the average pairing score against rice, milk, gelatin, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
