Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Tapioca Pudding
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Soak the tapioca overnight.
Heat the milk until just boiling, then stir in the tapioca and set it on the back of the stove.
Beat the egg yolks and sugar together until very light, then add to the milk and tapioca mixture.
Stir in the sliced apples or apple sauce.
Bake and serve
Bake in a slow oven at 300°F (150°C), stirring two or three times.
Make a meringue with the egg whites and brown it.
Serve the pudding hot or cold with cream and sugar.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tapioca
- Thickens the milk as it cooks and gives the pudding its soft, chewy texture.
- Egg yolks
- Enrich the custard and help set it into a creamy texture when baked.
- Egg whites
- Whipped into a meringue that browns on top for a light, golden finish.
- Sour apples
- Add tartness and fruity flavour that balances the sweetness of the pudding.
- Milk
- Forms the liquid base that the tapioca swells in and the custard sets from.
The step that matters
Stirring during the slow bake. Stirring two or three times during baking keeps the tapioca grains and apples evenly distributed, so they do not settle to the bottom while the pudding thickens.
Swap the apple
How well each one fits the dish's main ingredients (milk, egg, sugar, cream):
- Vanillafits better
- Strawberryfits better
- Raspberryfits better
- Applethe original
Fit is the average pairing score against milk, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
