Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Cream the butter, powdered sugar, and grated nutmeg together.

  2. Separate the eggs and beat the yolks until light.

  3. Add the beaten yolks to the butter and sugar mixture.

  4. Gradually mix in part of the flour, then part of the beaten egg whites.

  5. Add the remaining flour and the rest of the egg whites, mixing until combined.

Bake

  1. Pour the batter into a prepared pan and bake for 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the cake its rich, tender body.
Eggs
Yolks add richness and emulsify the batter; whites, beaten in, lighten and help the cake set.
Flour
Provides the structure that sets as the cake bakes and holds it together.
Powdered sugar
Sweetens the cake and, creamed with butter, helps create a fine, even crumb.

The step that matters

Mixing the flour and egg whites in portions. Adding flour in stages and folding in whites gently keeps the batter airy and prevents overmixing, which would toughen the gluten and make the cake dense.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, flour, sugar, butter):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against egg, flour, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
