What each ingredient does

Buckwheat flour
Gives the batter its earthy flavor and structure for the pancakes.
Cornmeal (in the method)
Adds body and a grainy texture to the thick batter.
Yeast cake
Ferments the overnight batter so it rises and becomes airy.
Baking soda
Reacts with the fermented batter to lighten the pancakes and aid browning.

The step that matters

Let the batter rise overnight. Yeast needs time to ferment the batter; a short rise leaves the pancakes dense and flat, so the batter should be left undisturbed until it has risen and bubbled.
