What each ingredient does

Sardines
Provide the main savoury flesh and rich, oily flavour of the dish.
Butter
Adds richness and moisture to the toast and a golden, savoury flavour.
Lemon juice
Adds acidity that brightens the rich, oily flavour of the sardines.
Bread for toast
Gives a crisp, absorbent base that holds the sardines and butter.

The step that matters

Carefully place in a chafing dish and heat for five minutes.. Sardines are delicate and can break apart or dry out with rough handling or too much heat. Gentle placement and short, controlled heating keep the fish moist and intact while it warms through.

Swap the lemon

How well each one fits the dish's main ingredients (butter, pepper, bread):

  1. Lemonthe original
  2. Figfits about as well
  3. Plumfits less well
  4. Mangofits less well

Fit is the average pairing score against butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
