Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Game birds or rabbits
Provide the main meat, which flavours the broth as it stews.
Lean beef
Releases flavour and body into the broth during long, gentle stewing.
Lean ham
Adds savoury, salty depth to the broth when fried first.
Onions
Caramelise in butter to add sweetness and savoury depth to the soup.
White celery
Adds fresh, aromatic crunch when added briefly near the end.

The step that matters

Stewing gently after heating slowly. Heating slowly and keeping the soup at a gentle simmer lets collagen and flavour release from the meat without toughening it or clouding the broth.
