Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Season the cleaned salmon inside and out with pepper and salt.

  3. Prepare stuffing by soaking bread slices in hot milk or water; add sage or thyme if desired.

  4. Stuff the salmon and tie it with thread to secure the filling.

Bake

  1. Place muffin rings or a trivet in a dripping pan and put the salmon on top.

  2. Dot the salmon with butter and sprinkle with flour.

  3. Add 1 pint of hot water to the pan for basting.

  4. Bake for 1 hour, basting frequently.

Make the gravy and serve

  1. For the gravy, fry lemon slices in the pan after removing the fish.

  2. Sprinkle with flour and a small piece of butter, stirring until browned.

  3. Add boiling water to the mixture, stirring until smooth.

  4. Strain the gravy into a serving boat and serve with boiled potatoes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Soaked bread forms a moist stuffing that fills the cavity and keeps the fish tender.
Butter
Adds fat and richness to the fish surface and helps the gravy brown.
Flour
Sprinkled on the fish and browned in the gravy to thicken it.
Lemon
Frying the slices in the pan adds a bright, acidic flavour to the gravy.

The step that matters

Basting the salmon during the hour of baking. Frequent basting with hot water and pan juices keeps the surface from drying out, since the lean flesh loses moisture quickly in dry oven heat.

Swap the sage

The recipe marks sage as optional. How well each one fits the dish's main ingredients (salmon, pepper, bread, milk, butter, lemon, flour):

  1. Parsleyfits better
  2. Nutmegfits about as well
  3. Marjoramfits about as well
  4. Sagethe original

Fit is the average pairing score against salmon, pepper, bread, milk, butter, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
