What each ingredient does

Salmon
Is the main protein that is cooked, cooled and preserved in the pickle.
Vinegar
Provides the acidity that gives the pickle its sharp flavour and helps preserve the fish.
Batter
Added in a small piece to the pickling liquid, where it thickens and clarifies the mixture.

The step that matters

Heat the mixture until boiling, then skim it clear. Bringing the vinegar and spiced liquid to a full boil sets the pickle's flavour and helps make it safe to keep, and skimming removes foam and impurities so the liquid stays clear.

Swap the mace

How well each one fits the dish's main ingredients (salmon, vinegar, clove, pepper, allspice, egg):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against salmon, vinegar, clove, pepper, allspice, egg. Candidates are from the same food group and used in at least 100 recipes.
