Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Clam Chowder

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Grease a deep tin basin and layer it with grated bread crumbs or soaked crackers.

Layer and bake

  1. Sprinkle pepper and add butter and parsley if desired.

  2. Add a layer of clams and season with pepper.

  3. Cover with another layer of soaked crackers, then more clams and butter.

  4. Sprinkle with pepper again and pour in milk or water.

  5. Top with a final layer of soaked crackers.

  6. Cover with a plate and bake for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main seafood flavor and the chowder's substance.
Soda biscuits
Soak up liquid and thicken the dish as they bake, giving it body.
Milk or water
Supplies moisture that steams the layers and softens the crackers as they bake.
Butter
Adds richness and fat, carrying flavor through the layers.
Bread crumbs or crackers
Form the base and absorb moisture, helping the layers hold together.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (bread, pepper, butter, clam, milk, biscuit):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Cinnamonfits less well
  4. Capersfits less well

Fit is the average pairing score against bread, pepper, butter, clam, milk, biscuit. Candidates are from the same food group and used in at least 100 recipes.
