Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; the soft, delicate texture is the centre of the stew.
Veal stock
Provides the savoury liquid base that the stew cooks in.
Butter and flour thickening
Thickens the stock into a smooth, lightly bodied sauce.
Eggs
Enrich and thicken the sauce gently when stirred in off the boil.
Cream
Adds richness and a silky mouthfeel to the finished sauce.

The step that matters

Stirring in the egg and cream mixture. Eggs thicken by gentle heat. If the sauce boils, the egg proteins can curdle and turn grainy, so it should only be heated until hot.
