Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fricasseed Rabbits

Ingredients

Directions

Stew the rabbit

  1. In a stewpan, combine the rabbit pieces with cayenne pepper, salt, and chopped parsley.

  2. Pour in the warm water or broth and stew over low heat until the rabbit is tender.

  3. When the rabbit is halfway done, add the butter rolled in flour.

Finish and serve

  1. Just before serving, stir in the thick cream and grated nutmeg, being careful not to let it boil.

  2. Place the rabbit pieces on a hot dish and pour the gravy over them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rabbit
Provides the main protein, which becomes tender through slow stewing in liquid.
Butter rolled in flour
Flour thickens the liquid into a gravy while the butter adds richness and body.
Thick cream
Adds richness and a smooth, velvety texture to the gravy.
Warm water or broth
Forms the cooking liquid that gently stews the rabbit and becomes the gravy.

The step that matters

Stir in the cream without boiling. Cream can curdle or separate when it boils, which breaks the smooth texture of the gravy. Adding it just before serving and keeping the heat low protects its silky consistency.

Swap the parsley

How well each one fits the dish's main ingredients (rabbit, pepper, butter, flour, cream, nutmeg):

  1. Cinnamonfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Turmericfits about as well

Fit is the average pairing score against rabbit, pepper, butter, flour, cream, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
