  3. Stuff the turkey with the mixture and add chopped ham if desired.

  1. Place the turkey in a large pot and cover it with clean water.

  2. Heat the pot over a clear fire, but avoid a fierce flame.

  3. Skim the surface of the water carefully and constantly.

  4. Simmer the turkey for 2.5 hours for a large turkey, 2 hours for a smaller one, or 1 hour and 10 to 40 minutes for very small turkeys.

What each ingredient does

Turkey
Forms the main body of the dish, cooked gently in water until tender.
Stale bread crumbs
Absorb moisture and bind the stuffing together.
Marrow or butter
Adds fat and richness, keeping the stuffing moist.
Oysters
Add briny flavour and a soft texture to the stuffing.

The step that matters

Skim the surface of the water carefully and constantly. Simmering water throws off foam and scum that can cloud the broth and spoil its flavour. Keeping the surface clean and the heat gentle, without a fierce flame, keeps the turkey tender and the liquid clear.

Swap the parsley

  1. Thymefits about as well
