Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Coral and spawn
- Provides the rich lobster flavor and the color of the sauce.
- Sweet butter
- Forms the body of the sauce and carries fat-soluble flavor.
- Water or vinegar
- Thins the melted butter and adds a light acidity that sharpens the sauce.
- Made mustard
- Adds sharpness and helps emulsify the butter into a smoother sauce.
The step that matters
Stir until smooth. Butter can separate from its liquid if it gets too hot or is not stirred. Constant stirring keeps the fat emulsified so the sauce stays smooth and glossy.
Swap the mustard
How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):
- Mustardthe original
- Capsicumfits about as well
- Shallotfits less well
- Potatofits less well
Fit is the average pairing score against lobster, butter, vinegar, pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
