Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and boiling to thicken the milk into a pudding.
Egg yolks
Thicken the pudding and add richness and a custard-like texture.
Egg whites
Whipped into stiff peaks to form a light, airy topping that browns.
Milk
Provides the liquid that the tapioca cooks in, giving the pudding its body.
Sugar
Sweetens the pudding and the meringue-style topping.

The step that matters

Boil the yolk mixture for an additional 10 minutes. Egg yolks thicken as they heat, but overheating can curdle or scramble them, so the mixture should be kept at a steady boil while stirred.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Coconutthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
