Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Supply the main fruit flavour, colour and juice for the base.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer.
Sweet cream
Its fat gives the ice cream a rich, smooth, creamy texture.
Whipped cream
Adds air, making the finished ice cream lighter and less icy.

The step that matters

Add whipped cream and strawberries when partially set.. If the mixture is fully frozen, the whipped cream cannot blend in evenly and the strawberries may not distribute well. Partly frozen base is thick enough to hold them suspended while keeping the whipped cream airy.

Swap the strawberry

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberrythe original
  3. Raspberryfits about as well
  4. Raisinfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
