What each ingredient does

Fine ripe strawberries
Provide the main flavour and colour of the syrup.
Simple syrup
Adds sweetness and body, balancing the tartness of the fruit juice.

The step that matters

Boil gently for one hour. Gentle heat reduces the juice and concentrates its flavour without scorching the sugar or cooking off the fresh strawberry aroma. Boiling too hard can darken the syrup and dull its colour.
