Almond Meringue Mixture

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meringue

  1. Preheat the oven to 350°F (175°C).

  2. Whip the egg whites with a pinch of salt until stiff peaks form.

  3. Gradually add the castor sugar and continue to whip until well combined.

  4. Fold in the shredded almonds gently.

Shape and bake

  1. Transfer the mixture to a piping bag fitted with a large plain tip.

  2. Pipe the mixture onto cold waxed baking sheets in desired shapes.

  3. Dust lightly with Marshall's Icing Sugar.

  4. Bake in the preheated oven until golden brown.

Serve

  1. Allow to cool before serving with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the meringue its structure and airy lift.
Castor sugar
Stabilises the whipped foam and adds sweetness, giving a glossy, firm texture.
Blanched almonds
Add body, texture and nutty flavour to the meringue mixture.

The step that matters

Fold in the almonds gently. Folding keeps the air bubbles in the whipped egg white foam intact. Vigorous stirring deflates the foam, so the shaped meringues spread and bake up dense instead of light.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, cream):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits less well
  4. Pecansfits less well

Fit is the average pairing score against egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
