Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Cod, Curried

Ingredients

Directions

Prepare

  1. Wash and dry the cod, then cut it into pieces about 1½ inches square.

  2. Melt the butter or fat in a stewpan and lightly fry the cod, then set it aside.

Make the curry sauce

  1. Add the sliced onion, flour, and curry powder to the fat in the stewpan and fry for about 15 minutes, stirring continuously.

  2. Pour in the stock, stir until it boils, then simmer gently for about 20 minutes.

  3. Strain the mixture and return it to the saucepan, then add lemon juice and seasoning to taste.

Finish and serve

  1. Bring nearly to boiling point, then add the fish, cover closely, and let it sit for about 30 minutes.

  2. Stir occasionally to prevent the fish from sticking to the bottom of the stewpan.

  3. Serve with rice.

What each ingredient does

Cod
Forms the main body of the dish; gentle heat in the sauce keeps it moist and flaky.
White stock
Provides the liquid base that the curry sauce is built on and carries its flavour.
Butter or good fat
Carries the curry powder's fat-soluble aroma and gives the onion and flour a rich base.
Flour
Thickens the sauce as it cooks with the fat and stock.
Curry powder
Supplies the main spiced aroma and flavour of the sauce.
Onion
Adds sweetness and body to the sauce as it fries and softens.

The step that matters

Keeping the fish sitting in the hot sauce. Fish protein sets and toughens with prolonged high heat, so the sauce should be just below boiling before the cod goes in, and stirring helps prevent it sticking and breaking apart.

Swap the onion

How well each one fits the dish's main ingredients (fish, butter, flour, pepper, lemon):

  1. Shallotfits better
  2. Spinachfits better
