What each ingredient does

Prawns
Provide the main protein, which cooks quickly and turns firm and opaque when heated through.
Butter or good fat
Carries the curry spices and adds richness and a rounded mouthfeel to the sauce.
Curry powder
Supplies the main spice aroma and flavour of the dish.
Flour
Thickens the sauce as it cooks with the fat, giving it body.
Sour apple
Adds acidity and fruitiness that balances the spices and softens as it simmers.
Onion
Builds a sweet, savoury base of flavour when softened in the fat.

The step that matters

Fry the curry powder and flour slowly. Gentle frying in fat cooks out the raw, dusty taste of the spices and toasts the flour. Rushing this over high heat can scorch the flour and leave a bitter, harsh curry flavour.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, apple, coconut, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against butter, flour, apple, coconut, lemon. Candidates are from the same food group and used in at least 100 recipes.
