Why it works: Beef and onion are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,092 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ox-kidney, Stewed

Ingredients

Directions

Prepare the kidney

  1. Cut the kidney into slices about ½ inch thick and remove the core.

  2. Heat the beef dripping in a stewpan.

Brown and simmer

  1. Season the flour with salt and pepper, dip the kidney slices in the mixture, and fry them in the hot fat until browned on both sides, adding the onion at the same time.

  2. Drain away the fat, add 1 pint of nearly boiling stock or water, and season with a little salt and pepper.

  3. Cover closely and simmer very slowly for about 1 hour.

Thicken and serve

  1. Knead the butter and flour together smoothly, then add it in small portions to the stewpan contents.

  2. Cook for 20 minutes longer, or until the kidney is perfectly tender.

  3. Arrange the kidney slices on a hot dish, season the sauce to taste, and strain it over.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox kidney
Forms the main body of the stew and becomes tender through long slow simmering.
Beef dripping
Fat for frying the kidney, building browned flavour on the surface of the slices.
Flour
Coats the kidney for browning and, kneaded with butter, thickens the sauce.
Butter
Kneaded with flour and stirred in to enrich and smooth the sauce.
Onion
Softens and adds sweetness and aroma to the stewing liquid.

The step that matters

Simmering the kidney very slowly. Kidney is tough collagen-rich muscle; gentle, covered simmering breaks down its connective tissue into tenderness. Boiling vigorously toughens and shrinks the meat.

Swap the onion

How well each one fits the dish's main ingredients (beef, butter, flour, pepper):

  1. Potatofits about as well
  2. Chivefits about as well
  3. Leekfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
