Directions

Prepare the paunch

  1. Soak the sheep’s paunch in salt water for several hours.

  3. Wash the pluck.

Cook the offal

  1. Cover the liver with cold water.

  2. Boil the liver for about 1½ hours.

  3. After 1 hour, add the heart and lights.

  4. Chop half the liver into medium-sized pieces.

  5. Finely chop the remaining liver, heart, and lights.

Fill and cook

  1. Mix all chopped ingredients with oatmeal, suet, onions, salt, pepper, nutmeg, lemon juice, and stock.

  2. Fill the paunch with the mixture.

  3. Sew the paunch up, leaving space for the oatmeal to swell.

  4. Place the haggis in boiling water.

  5. Cook gently for about 3 hours.

  6. Prick the haggis occasionally to allow air to escape.

What each ingredient does

Oatmeal
Absorbs liquid and swells, giving the haggis its body and texture.
Beef suet
Adds fat that keeps the filling moist and rich as it cooks.
Sheep’s paunch
Acts as the casing that holds the filling together during cooking.
Liver (in the method)
Provides savoury, meaty flavour and a soft, rich texture to the filling.
Spanish onions
Add sweetness and savoury depth to the filling as they cook.

The step that matters

Leaving room in the paunch. Oatmeal swells as it absorbs liquid and fat melts during cooking. If the paunch is packed too tightly it can burst, so space must be left before sewing it shut.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, nutmeg, lemon):

  1. Spinachfits better
  2. Carrotfits better
  3. Capsicumfits better
