  3. Drain the fried bread.

  4. Place the sweetbread on top of the bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's sweetbread
Main protein that becomes tender and delicate through gentle braising after blanching.
Stock
Provides moist, gentle heat and flavour so the sweetbread braises rather than dries.
Gravy or tomato sauce
Adds moisture and savoury richness around the sweetbread on the plate.
Fried bread
Gives a crisp, golden base that soaks up juices and supports the sweetbread.

The step that matters

Keep the vegetables nearly covered with stock, topping up as needed, while braising gently. Gentle, moist heat keeps the sweetbread tender. If the liquid boils away or the pan runs dry, the surface toughens and dries, and the flavour of the braise becomes concentrated and bitter instead of rounded.
