Directions

Divide the birds into neat joints and remove all bones except those deeply embedded in the flesh.
Make and mold the pastry, lining the bottom and sides with veal forcemeat.
Place the prepared game inside, seasoning each layer with salt and pepper, and add small pieces of the meat forcemeat.
Leave spaces to fill with stock, pile the game high in the center, and cover with a thin layer of veal forcemeat.
