Ingredients

Directions

Stew the cabbage

  1. In a stew pan, combine the sliced cabbage, diced ham, butter, stock, and vinegar.

  2. Cover the pan and stew for about 1 hour until the cabbage is very tender.

Season and finish

  1. Add the remaining stock, season with salt, pepper, and sugar. Mix well and stir over the heat until most of the liquid has evaporated.

  2. Serve garnished with fried sausages around the cabbage.

What each ingredient does

Red cabbage
Forms the bulk of the dish and turns very tender during the long, covered stew.
Ham
Adds savoury, salty flavour and a meaty richness to the cabbage.
Butter
Adds fat and richness, carrying flavour through the stewing liquid.
Stock
Provides the cooking liquid that softens the cabbage and carries flavour.
Vinegar
Adds acidity that sharpens the flavour and helps the cabbage keep its colour.
Sugar
Balances the sharpness of the vinegar with a touch of sweetness.

The step that matters

Reducing the liquid at the end. Stirring over heat evaporates the liquid and concentrates the flavours. Stopping too early leaves the dish watery, while reducing too far can scorch the sugar and cabbage on the pan base.

Swap the cabbage

How well each one fits the dish's main ingredients (ham, butter, vinegar, pepper, sugar):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against ham, butter, vinegar, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
