Mushrooms, Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 400°F (200°C).

  2. Cut off a portion of the stalk from the mushrooms and peel the tops.

  3. Place the mushrooms in a baking dish and add a small piece of butter on each one.

  4. Sprinkle with pepper.

Bake and serve

  1. Bake for about 20 minutes, or longer if the mushrooms are large.

  2. Serve immediately on a hot dish, piling the mushrooms in the center and pouring gravy around them.

What each ingredient does

Mushrooms
Form the main body of the dish and release moisture as they cook, softening into a tender bite.
Butter
Adds richness and moisture, helping the mushrooms brown and carry flavor as they bake.

The step that matters

Bake until the mushrooms are tender. Mushrooms are mostly water. Baking long enough lets that water evaporate and concentrates their flavor, while larger mushrooms need more time to cook through evenly.
