What each ingredient does

Ground rice
Thickens the milk as it simmers, giving the mould its body and firm set.
Milk
Forms the liquid base that the ground rice thickens into a set custard-like mould.
Apricot jam or pulp
Adds apricot flavour, colour and sweetness to the milk mixture.
Cream
Adds richness and a light, airy texture when whipped for serving.

The step that matters

Simmering the ground rice. Ground rice must be cooked long enough for its starch to swell and gelatinise fully. Undercooked rice leaves a grainy texture and a weak set once the mould cools.
