What each ingredient does

Lemons
Provide the main acidity and bright lemon flavour, plus aromatic oils from the peel.
Oranges
Add sweetness and juice that softens the sharp lemon flavour.
Syrup for water ices
Sweetens the ice and lowers its freezing point so it stays soft and scoopable.

The step that matters

Let the peel steep in the hot syrup as it cools. The hot syrup draws the fragrant oils out of the thinly cut peel. Covering the basin keeps those volatile aromas from escaping, so the flavour comes through in the finished ice.

Swap the orange

How well each one fits the dish's main ingredients (syrup, lemon):

  1. Orangethe original
  2. Limefits about as well
  3. Raspberryfits less well
  4. Vanillafits less well

Fit is the average pairing score against syrup, lemon. Candidates are from the same food group and used in at least 100 recipes.
