Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Cook the macaroni

  1. Break the macaroni into small pieces and boil in slightly salted rapidly boiling water until tender.

  2. Drain well.

Make the sauce

  1. Melt the butter in a saucepan.

  2. Stir in the flour.

  3. Add the milk and bring to a boil, stirring continuously.

  4. Add the macaroni, cheese, mustard, salt, and pepper. Mix well.

Bake and serve

  1. Transfer the mixture to a greased fireproof dish.

  2. Sprinkle with brown breadcrumbs and grated cheese.

  3. Dot with small pieces of butter.

  4. Bake in a 400°F (200°C) oven until nicely browned.

  5. Alternatively, cook in scallop shells or ramekin cases.

What each ingredient does

Macaroni
Forms the bulk of the dish and holds the sauce in its tubes.
Flour
Thickens the butter and milk into a smooth sauce that coats the pasta.
Milk
Forms the liquid base of the sauce, giving it creaminess.
Grated cheese
Adds rich flavour and melts into the sauce for a creamy texture.
Butter
Adds richness and helps form the roux that thickens the sauce.
Made mustard
Adds a sharp note that balances the richness of the cheese.

The step that matters

Stirring the milk into the roux. Adding the milk while stirring continuously keeps the flour evenly dispersed, so the sauce thickens smoothly instead of forming lumps.
