Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Finely shred equal quantities of orange, lemon, and citron peel.

  2. Blanch the almonds and chop them finely.

  3. Sift the flour onto a sheet of paper and mix in the peel and almonds.

Make the batter

  1. In a clean bowl, beat the butter until light and creamy.

  2. Add the sugar and beat well, then add the eggs and mix thoroughly.

  3. Gradually add the flour mixture, using milk as needed to achieve cake batter consistency.

Bake

  1. Pour the batter into a round tin lined with greased paper.

  2. Bake in a preheated oven at 350°F (175°C) for 1 to 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar, it traps air that lifts the cake and gives a rich, tender crumb.
Sugar
Beaten with the butter to aerate the batter and add sweetness and tenderness.
Eggs
Bind the batter and add structure and moisture as the cake sets.
Flour
Provides the structure that sets as the cake bakes.

The step that matters

Beating the butter until light and creamy. Beating softened butter with sugar traps air bubbles that expand in the oven and lift the cake. Under-beating leaves a dense crumb.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (butter, flour, sugar, currant, egg, almond, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against butter, flour, sugar, currant, egg, almond, milk. Candidates are from the same food group and used in at least 100 recipes.
