Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Its proteins coagulate as it heats, trapping particles and clarifying the stock.
Vegetable stock
Forms the liquid base that the consomme is clarified from.
Carrot
Adds sweetness and aromatic flavour to the stock.
Onion
Adds savoury depth and aroma to the stock.

The step that matters

Strain without pressing. Pressing the cloth forces fine solids through the clarified layer, leaving the consomme cloudy. Letting it drip keeps the clear liquid clear.

Swap the onion

How well each one fits the dish's main ingredients (carrot, celery, leek, egg):

  1. Parsnipfits better
  2. Turnipfits better
  3. Chivefits better
