Ox-tail Soup

Ingredients

Directions

Prepare the ox-tail

  1. Cut the ox-tail into small joints and place them in a stewpan.

  2. Cover with cold water, bring to a boil, and strain.

  3. Dry the pieces of ox-tail, roll them in flour, and add them to the stewpan with the ham and sliced vegetables and butter.

  4. Fry until browned.

Simmer the soup

  1. Add the stock, herbs, peppercorns, cloves, and salt.

  2. Boil and skim well.

  3. Cover and cook gently for about 4 hours.

  4. Strain the soup, remove the fat, and return it to the stewpan.

Finish and serve

  1. When boiling, add the sherry and cornflour mixed smoothly. Stir and cook for a few minutes.

  2. Serve the smaller pieces of the tail in the soup.

  3. The remaining pieces can be reheated in a good brown sauce and served as an entrée.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox-tail
Provides rich meat flavour and gelatine that gives the soup body as it simmers.
Butter
Fat for frying that promotes browning of the ox-tail and vegetables, adding savoury flavour.
Cornflour
Starch that thickens the strained soup when cooked at a boil.
Sherry
Adds acidity and aromatic sweetness to finish the soup.
Onions
Sliced vegetables that add sweetness and aroma as they brown and soften.

The step that matters

Adding the cornflour. Cornflour must be mixed smoothly with a little liquid first, then added to a boiling soup. Stirring while it boils lets the starch swell evenly and thicken without lumps.

Swap the onion
