Vegetable Soup

Ingredients

Directions

Prepare

  1. Prepare the vegetables and cut them into strips about the size of a thick match.

Cook the soup

  1. Melt the butter in a saucepan and fry the vegetables slowly until the butter is absorbed.

  2. Add the boiling water, ½ pint of milk, salt, and pepper, and simmer gently until the vegetables are tender, about 5 to 10 minutes.

  3. Mix the flour and the remaining milk smoothly together, then pour the mixture into the saucepan.

  4. Stir and cook for a few minutes, then serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the soup as it cooks, giving it body.
Butter
Fat that softens the vegetables and carries flavour during frying.
Milk
Adds richness and creaminess to the broth.
Carrots
Provide sweetness and colour, and soften into tender pieces.

The step that matters

Adding the flour mixture. Flour must be mixed smoothly with milk before it goes into the hot liquid. Added dry or in lumps, starch clumps and the soup becomes uneven. Stirring while it cooks keeps the thickening even.

Swap the onion

How well each one fits the dish's main ingredients (carrot, turnip, leek, celery, parsley, butter, flour):

  1. Parsnipfits better
  2. Shallotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against carrot, turnip, leek, celery, parsley, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
