What each ingredient does

White fish
Forms the main body of the pudding and gives it its flavour.
Suet
Adds fat that keeps the pudding moist and tender during steaming.
Breadcrumbs
Absorb liquid and help the mixture hold together with a soft texture.
Eggs
Bind the mixture and help it set firm as it steams.
Milk or fish stock
Adds moisture so the pudding stays soft rather than dry.

The step that matters

Steam gently. Gentle steaming sets the egg-bound mixture evenly without boiling it. Vigorous boiling can make the pudding rough, porous, or cause it to break apart.

Swap the parsley

How well each one fits the dish's main ingredients (fish, milk, egg, anchovy, pepper):

  1. Parsleythe original
  2. Capersfits about as well
  3. Nutmegfits less well
  4. Tarragonfits less well

Fit is the average pairing score against fish, milk, egg, anchovy, pepper. Candidates are from the same food group and used in at least 100 recipes.
