What each ingredient does

Prawns
Provide the main protein, cooked gently in the finished sauce.
Butter
Carries the spices and onion, adding richness and helping them fry without sticking.
Curry powder
Supplies the spiced, aromatic flavour that defines the dish.
Flour
Thickens the sauce, giving it body as it cooks with the stock.
Sour apple
Adds tartness and some body as it softens into the simmering sauce.
Stock
Forms the liquid base of the sauce.

The step that matters

Frying the curry powder and flour. Frying spices and flour slowly in fat cooks off raw, dusty flavour and develops aroma. Rushing this step leaves the curry tasting raw and the sauce pasty, so keep the heat gentle and stir often.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, apple, coconut, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Shallotfits better
