Brown Sauce

Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and 14,555 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the stock into a smooth sauce as it cooks.
Butter
Carries the frying of the vegetables and adds richness to the sauce.
Brown stock
Forms the liquid base of the sauce, adding savoury flavour.
Mushrooms
Browning in fat builds savoury depth of flavour.
Onion
Browning softens its sweetness and adds savoury depth.
Tomato
Adds acidity and a fresh, tangy note to the sauce.

The step that matters

Cooking the flour. Flour must be stirred and cooked for a few minutes in the fat so it loses its raw taste and thickens evenly. Adding liquid too early can leave lumps.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (butter, flour, carrot, mushroom, tomato, pepper):

  1. Capsicumbetter flavor fit
  2. Spinachbetter flavor fit
  3. Potatobetter flavor fit
  4. Onionthe original

Fit is the average pairing score against butter, flour, carrot, mushroom, tomato, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
